Sushi nigiri rolled tableside during a corporate dinner. The chef makes the meal the centerpiece instead of an afterthought. We work with a roster of Miami private chefs covering Italian, Mediterranean, Japanese sushi, Latin American, and contemporary American menus. Send us the vibe and dietary requirements and we match the chef to the booking. Galley capacity matters. The Azimut Daniella 100 has the most full-featured galley in our fleet and is the right vessel for chef-driven multi-course dinners with hot plating. Rodman 110 is the alternative. Wally 85 has a compact galley suitable for plating courses prepared earlier but with limited active cooking. We confirm vessel-galley match at booking. Dietary accommodations are standard. Gluten-free, vegan, kosher, halal, allergen-restricted menus available with notice. Send the dietary list at booking and the chef plans accordingly. Wine and beverage pairings handled separately. Either coordinated through our Miami sommelier contact or BYO from your own collection. Lead time 2 to 3 weeks for standard chef bookings, 4 to 6 weeks for tasting-menu specialists or named chefs.

Can the chef do a raw bar?
Yes. Oyster shucking, ceviche, crudo plates, and seafood tower presentations are popular for sunset and birthday charters.
Is the chef on board the whole charter?
Standard booking is service window plus prep and breakdown. For full-day charters with multiple meal services, the chef can stay onboard the full window.
Who handles wine pairing?
Chef can recommend pairings. We coordinate wine sourcing through a Miami-based supplier or you can BYO from your own collection.
